- 6 ripe fresh figs
- 3 oz goat cheese, softened
- 2 tablespoons honey
- 2 tablespoons shelled pistachios, chopped
- 1 teaspoon fresh thyme leaves, plus extra sprigs for garnish
- Pinch of sea salt
Instructions
- Gently wash and dry the figs. Using a paring knife, make an “X” cut on the top of each fig, stopping just before the base to keep them intact.
- Gently open the figs to form a flower shape.
- Spoon about 1/2 tablespoon of goat cheese into the center of each fig.
- Drizzle each stuffed fig with honey.
- Sprinkle with chopped pistachios, thyme leaves, and a tiny pinch of sea salt.
- Garnish with a fresh thyme sprig and serve immediately.
