  • 1 (10.5 ounce) can French onion soup
  • 1 1/2 cups water
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Caramelize Onions: Warm the olive oil and butter in a large skillet over medium heat. Add the thinly sliced onions and sprinkle with sugar. Cook, stirring frequently, until the onions become very soft and caramelized, about 25–30 minutes.
  2. Prepare Rice Mixture: While the onions caramelize, combine the rice, beef consommé, French onion soup, water, dried thyme, salt, and pepper in a greased 9×13-inch baking dish. Stir well to mix all ingredients thoroughly.
  3. Top with Caramelized Onions: Once the onions are perfectly caramelized, spread them evenly over the rice mixture in the baking dish.
  4. Cover and Bake: Cover the baking dish tightly with aluminum foil and bake in a preheated oven at 425°F (220°C) for 30 minutes to cook the rice partially and infuse flavors.
  5. Uncover and Continue Baking: Carefully remove the foil and stir the rice gently. Return the dish to the oven and bake uncovered for another 30 minutes until the rice is tender and has absorbed the liquid.
  6. Rest and Serve: Remove the dish from the oven and let the rice stand for 5 minutes to allow flavors to settle. Fluff the rice with a fork, garnish with fresh thyme or parsley if desired, and serve warm.
