Description

This Easy White Turkey Chili is a hearty and flavorful dish featuring ground turkey, cannellini beans, and a blend of spices, simmered to perfection and topped with creamy Greek yogurt and fresh garnishes.

  • 2 Tablespoons olive oil, divided
  • 1 1/2 pounds ground turkey
  • 1 cup yellow onion, diced
  • 1 jalapeno, seeds removed and diced
  • 4 cloves garlic, minced
  • 14.5 ounce can of diced green chiles
  • 1 1/2 teaspoons cumin
  • 1 1/2 teaspoon oregano
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 315 ounce cans Cannellini beans, drained and rinsed
  • 4 cups chicken broth
  • 1 1/2 cups frozen corn
  • 1/2 cup greek yogurt (or sour cream)
  • Cilantro, avocado and cheese for garnish

Instructions

  1. Step 1: Add 1 tablespoon of olive oil to a large soup pot over medium heat.
  2. Step 2: Once oil is hot, add the ground turkey. Break up and cook until browned. Remove the turkey to a plate and tent with foil.
  3. Step 3: Drain any juices from the pot and add the remaining olive oil.
  4. Step 4: Add in the onion and cook until it begins to soften, about 5-7 minutes.
  5. Step 5: Add the diced jalapeno, minced garlic and diced green chiles and cook for 2-3 minutes more, stirring occasionally.
  6. Step 6: Add the cumin, oregano, cayenne pepper and salt and cook for 1 minute while stirring constantly. If necessary, you can deglaze the bottom of the pan with ½ cup of the chicken broth.
  7. Step 7: Add the beans and chicken broth. Stir well. Bring the mixture to a simmer and reduce the heat to medium low. Cook for 15-20 minutes, while stirring occasionally.
  8. Step 8: Return the cooked turkey to the pot and add the frozen corn. Continue to cook for another 10 minutes.
  9. Step 9: Remove the pot from the heat, stir in the yogurt or sour cream. Allow the chili to rest for about 5 minutes. Then serve with your favorite toppings.

Notes

  • Allowing the chili to rest for 5 minutes after cooking enhances the flavors.
  • If necessary, deglaze the bottom of the pan with chicken broth to lift flavorful bits.
  • Use Greek yogurt or sour cream for creaminess; garnish with cilantro, avocado, and cheese to taste.
