Instructions
- Cook the Noodles: Bring a large pot of water to a boil. Add the lo mein noodles and cook according to package instructions, about 4-5 minutes. Drain and rinse under cold water to stop the cooking process. Drizzle with a little vegetable oil and toss to prevent sticking. Set noodles aside.
- Prepare the Vegetables: While the noodles cook, wash and slice the bell peppers, julienne the carrots, and cut the broccoli into small florets. Rinse snap peas and bean sprouts. Chop the green onions, making sure to separate the white parts from the green tops for different cooking steps.
- Sauté Aromatics and Vegetables: Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and sauté for about 30 seconds until aromatic. Add the white parts of the green onions, bell peppers, broccoli, snap peas, and carrots. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Add Ginger and Bean Sprouts: Stir in the bean sprouts and ground or fresh ginger, cooking for an additional 1-2 minutes to combine flavors and soften the sprouts slightly.
- Combine Noodles and Sauce: Gently add the cooked lo mein noodles into the skillet with the vegetables. In a small bowl, mix soy sauce, oyster sauce (if using), and sesame oil. Pour the sauce over the noodles and vegetables.
- Toss and Heat Through: Use tongs or a spatula to toss everything together until the noodles are evenly coated with the sauce. Continue cooking for another 2-3 minutes until the dish is heated through.
- Season to Taste: Taste and season with salt and pepper as needed. Adjust the flavor with additional soy sauce or chili sauce if desired. Remove the skillet from heat.
- Serve: Serve hot, garnished with the green tops of the chopped green onions and a sprinkle of sesame seeds if desired. Enjoy on its own or paired with your favorite protein.
