- 1 cup dragon fruit purée (from fresh or frozen pitaya)
- 1/4 cup chia seeds
- 1 cup coconut milk (or any plant-based milk)
- 1 cup mango chunks (fresh or frozen)
- 1 tbsp maple syrup (optional, for mango)
- 1 cup coconut yogurt (or Greek yogurt)
- Fresh diced mango for topping
Instructions
- In a bowl, mix dragon fruit purée, chia seeds, and coconut milk. Stir well and let sit for 5 minutes. Stir again to prevent clumping, then refrigerate for at least 2 hours or overnight until thickened.
- In a blender, purée mango chunks with maple syrup (if using) until smooth. Set aside.
- To assemble, layer the bottom of each glass with dragon fruit chia pudding.
- Follow with a layer of coconut yogurt, then a layer of mango purée.
- Repeat the layers until the glass is full, finishing with a dollop of yogurt and fresh mango cubes on top.
- Serve chilled and enjoy immediately, or refrigerate for up to 2 days.
