Description

A vibrant, tropical parfait layered with dragon fruit chia pudding, creamy coconut yogurt, and sweet mango purée—finished with fresh mango cubes for a refreshing, healthy treat.


Ingredients

  • 1 cup dragon fruit purée (from fresh or frozen pitaya)
  • 1/4 cup chia seeds
  • 1 cup coconut milk (or any plant-based milk)
  • 1 cup mango chunks (fresh or frozen)
  • 1 tbsp maple syrup (optional, for mango)
  • 1 cup coconut yogurt (or Greek yogurt)
  • Fresh diced mango for topping

Instructions

  1. In a bowl, mix dragon fruit purée, chia seeds, and coconut milk. Stir well and let sit for 5 minutes. Stir again to prevent clumping, then refrigerate for at least 2 hours or overnight until thickened.
  2. In a blender, purée mango chunks with maple syrup (if using) until smooth. Set aside.
  3. To assemble, layer the bottom of each glass with dragon fruit chia pudding.
  4. Follow with a layer of coconut yogurt, then a layer of mango purée.
  5. Repeat the layers until the glass is full, finishing with a dollop of yogurt and fresh mango cubes on top.
  6. Serve chilled and enjoy immediately, or refrigerate for up to 2 days.
