Description

Golden pan-fried zucchini fritters with herbs and scallions, served with a creamy Greek yogurt dip—perfect as a snack, appetizer, or light meal.


Ingredients

  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1/4 cup chopped scallions
  • 1/4 cup chopped fresh parsley
  • 2 eggs
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 tablespoons grated Parmesan (optional)
  • 2 tablespoons olive oil, for frying
  • 1 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions

  1. Place grated zucchini in a bowl, sprinkle with salt, and let sit for 10 minutes. Squeeze out excess liquid using a clean kitchen towel.
  2. In a large bowl, combine zucchini, scallions, parsley, eggs, flour, pepper, garlic powder, and Parmesan (if using). Mix until well combined.
  3. Heat oil in a skillet over medium heat. Drop spoonfuls of batter into the pan and flatten slightly.
  4. Cook for 3–4 minutes per side or until golden brown and crispy. Transfer to a paper towel-lined plate.
  5. In a small bowl, mix yogurt, lemon juice, garlic, salt, and pepper to make the dip.
  6. Serve fritters warm with yogurt dip on the side.

Notes

  • Squeeze zucchini thoroughly to avoid soggy fritters.
  • Parmesan adds extra flavor but can be omitted for a dairy-free version.
  • These fritters can be baked instead of fried for a lighter option.
