- 1 medium head cauliflower, cut into bite-sized florets
- 3 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon cumin
- 1/4 teaspoon chili powder (optional, for heat)
- Salt and pepper, to taste
- Fresh chopped parsley, for garnish
- 1/4 cup ketchup (optional dipping sauce)
- 1 tablespoon hot sauce
- 1/2 teaspoon maple syrup
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, combine olive oil, paprika, garlic powder, onion powder, cumin, chili powder, salt, and pepper. Mix well.
- Add cauliflower florets to the bowl and toss until evenly coated with the spice mixture.
- Spread the cauliflower evenly on the prepared baking sheet in a single layer.
- Roast for 25–30 minutes, flipping once halfway through, until golden brown and crispy on the edges.
- While the cauliflower is roasting, stir together the dipping sauce ingredients in a small bowl.
- Remove cauliflower from oven and garnish with fresh parsley. Serve warm with the dipping sauce.
Notes
- Adjust chili powder to preferred heat level.
- For extra crispiness, broil for the last 2 minutes of roasting.
- Can be served as a side dish, appetizer, or healthy snack.
- Dipping sauce can be swapped for ranch or yogurt-based dips.
