Description

Golden and crispy on the outside, fluffy on the inside — these oven-roasted potatoes are tossed in olive oil, garlic, herbs, and Parmesan cheese, then baked to perfection for the ultimate savory side dish.


Ingredients

  • 2 lbs baby potatoes, halved
  • 3 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 1/3 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss halved potatoes with olive oil, garlic powder, onion powder, paprika, salt, and pepper.
  3. Spread potatoes cut side down in a single layer on the baking sheet.
  4. Roast for 30–35 minutes, flipping halfway through, until golden and crisp.
  5. In the last 5 minutes of roasting, sprinkle Parmesan cheese over the potatoes and return to the oven.
  6. Remove from oven, sprinkle with fresh parsley, and serve hot.

Notes

  • For extra crispiness, soak the potatoes in cold water for 30 minutes before roasting and dry thoroughly.
  • Use freshly grated Parmesan for best texture and flavor.
