- 2 lbs baby potatoes, halved
- 3 tablespoons olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt and black pepper to taste
- 1/3 cup grated Parmesan cheese
- 1 tablespoon chopped fresh parsley (for garnish)
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, toss halved potatoes with olive oil, garlic powder, onion powder, paprika, salt, and pepper.
- Spread potatoes cut side down in a single layer on the baking sheet.
- Roast for 30–35 minutes, flipping halfway through, until golden and crisp.
- In the last 5 minutes of roasting, sprinkle Parmesan cheese over the potatoes and return to the oven.
- Remove from oven, sprinkle with fresh parsley, and serve hot.
Notes
- For extra crispiness, soak the potatoes in cold water for 30 minutes before roasting and dry thoroughly.
