Description
Golden and crispy on the outside, soft and fluffy inside—these mashed potato fritters are mixed with fresh herbs, cheese, and spices, then pan-fried to perfection. Ideal as a snack, appetizer, or side dish with a dipping sauce.

- 2 cups mashed potatoes (chilled)
- 1/2 cup shredded mozzarella or cheddar cheese
- 1/4 cup grated Parmesan
- 1/4 cup breadcrumbs (plus extra for coating)
- 1 small onion, finely chopped
- 2 tbsp fresh parsley or mint, chopped
- 1 egg
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper to taste
- Oil for frying
Instructions
- In a large bowl, combine mashed potatoes, cheese, Parmesan, breadcrumbs, onion, herbs, egg, garlic powder, paprika, salt, and pepper.
- Mix until a thick, sticky mixture forms. If too soft, add extra breadcrumbs.
- Shape into small round patties and coat lightly in breadcrumbs.
- Heat a skillet with a shallow layer of oil over medium heat.
- Fry the fritters in batches for 2–3 minutes per side, until golden brown and crisp.
- Remove and drain on paper towels.
- Serve hot with yogurt dip, aioli, or a spicy chutney.
Notes
- Best made with leftover mashed potatoes that are firm and cold.
- Use panko for extra crispiness.
- Fritters can be frozen and reheated in the oven.
