Description

Golden and crispy on the outside, soft and fluffy inside—these mashed potato fritters are mixed with fresh herbs, cheese, and spices, then pan-fried to perfection. Ideal as a snack, appetizer, or side dish with a dipping sauce.


Ingredients

  • 2 cups mashed potatoes (chilled)
  • 1/2 cup shredded mozzarella or cheddar cheese
  • 1/4 cup grated Parmesan
  • 1/4 cup breadcrumbs (plus extra for coating)
  • 1 small onion, finely chopped
  • 2 tbsp fresh parsley or mint, chopped
  • 1 egg
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. In a large bowl, combine mashed potatoes, cheese, Parmesan, breadcrumbs, onion, herbs, egg, garlic powder, paprika, salt, and pepper.
  2. Mix until a thick, sticky mixture forms. If too soft, add extra breadcrumbs.
  3. Shape into small round patties and coat lightly in breadcrumbs.
  4. Heat a skillet with a shallow layer of oil over medium heat.
  5. Fry the fritters in batches for 2–3 minutes per side, until golden brown and crisp.
  6. Remove and drain on paper towels.
  7. Serve hot with yogurt dip, aioli, or a spicy chutney.

Notes

  • Best made with leftover mashed potatoes that are firm and cold.
  • Use panko for extra crispiness.
  • Fritters can be frozen and reheated in the oven.
