Description

Golden baby potatoes roasted to perfection with a crispy exterior and tender center, tossed in garlic, fresh herbs, and a touch of butter—an irresistible side dish for any meal.

  • 3 tbsp olive oil
  • 2 tbsp unsalted butter, melted

  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, combine potatoes, olive oil, melted butter, garlic, salt, pepper, and paprika. Toss until evenly coated.
  3. Spread potatoes cut-side down on the prepared baking sheet in a single layer.
  4. Roast for 35–40 minutes, flipping halfway through, until golden brown and crispy.
  5. Remove from oven and toss with fresh parsley. Garnish with parmesan or bacon if desired. Serve hot.
