Instructions
- Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.
- In a large bowl, combine potatoes, olive oil, melted butter, garlic, salt, pepper, and paprika. Toss until evenly coated.
- Spread potatoes cut-side down on the prepared baking sheet in a single layer.
- Roast for 35–40 minutes, flipping halfway through, until golden brown and crispy.
- Remove from oven and toss with fresh parsley. Garnish with parmesan or bacon if desired. Serve hot.
