Description

Golden brown on the outside and filled with melted cheese, these crispy cheese-stuffed potato cakes are a comforting and savory treat, ideal as a snack, side dish, or breakfast.


Ingredients

  • 2 cups mashed potatoes (cold and firm)
  • 1 cup shredded mozzarella or cheddar cheese
  • 1 egg
  • 1/4 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • 1 cup breadcrumbs
  • 2 tbsp chopped chives, plus more for garnish
  • 2 tbsp olive oil (for frying)

Instructions

  1. In a bowl, mix mashed potatoes with egg, flour, Parmesan, chopped chives, salt, and pepper until well combined.
  2. Take a portion of the mixture and flatten it in your hand. Add a spoonful of shredded cheese to the center, then shape into a patty, enclosing the cheese.
  3. Repeat with the remaining mixture.
  4. Coat each patty in breadcrumbs, pressing lightly to adhere.
  5. Heat olive oil in a non-stick skillet over medium heat.
  6. Fry the potato cakes for 3–4 minutes per side, or until golden brown and crispy.
  7. Drain on paper towels and sprinkle with extra chives. Serve hot.

Notes

  • Use cold, firm mashed potatoes for best results.
  • You can experiment with different cheeses for variation.
  • Serve with sour cream or a dipping sauce if desired.
