- 2 cups finely chopped broccoli (steamed and drained)
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs (plus more for coating)
- 1 large egg
- 1/4 tsp garlic powder
- Salt and pepper to taste
- 1/2 tsp paprika
- Olive oil spray or cooking oil (for baking or frying)
Instructions
- Preheat oven to 400°F (200°C) or heat oil in a pan if frying.
- In a large bowl, mix together chopped broccoli, cheddar, Parmesan, breadcrumbs, egg, garlic powder, paprika, salt, and pepper until well combined.
- Shape the mixture into small balls (about 1 tablespoon each) and roll them in additional breadcrumbs for extra crunch.
- Arrange on a parchment-lined baking sheet and spray lightly with olive oil, or fry in batches until golden brown.
- Bake for 20–25 minutes or fry until crisp and cooked through, turning occasionally for even browning.
- Serve warm with your favorite dipping sauce—honey mustard, ranch, or cheese sauce work great.
