Description
Golden and crunchy on the outside, soft and cheesy inside—these broccoli and cheese croquettes are the perfect healthy snack or appetizer, served with a tangy yogurt dip.

- 2 cups steamed broccoli, finely chopped
- 1 cup shredded cheddar cheese
- 1/2 cup breadcrumbs (plus more for coating)
- 1/4 cup grated Parmesan
- 1 egg
- 1 clove garlic, minced
- 1/2 tsp onion powder
- 1/4 tsp black pepper
- Salt to taste
- Olive oil spray (for baking)
- 1/2 cup Greek yogurt
- 1 tbsp lemon juice
- 1 tbsp finely chopped red onion
- 1 tbsp fresh parsley, chopped
- Salt and pepper to taste
- Drizzle of olive oil
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine chopped broccoli, cheddar, breadcrumbs, Parmesan, egg, garlic, onion powder, pepper, and salt. Mix well until a moldable mixture forms.
- Shape into oval croquettes and roll them in extra breadcrumbs to coat.
- Arrange croquettes on the baking sheet and spray lightly with olive oil.
- Bake for 20–25 minutes, turning once halfway, until golden brown and crispy.
- For the dip, mix Greek yogurt, lemon juice, red onion, parsley, salt, pepper, and a drizzle of olive oil in a bowl. Refrigerate until ready to serve.
- Serve croquettes warm with the yogurt dip.
Notes
- Use gluten-free breadcrumbs to make this recipe gluten-free.
- Chill the mixture for 15 minutes if it feels too soft to shape.
- Can be air-fried or pan-fried for variation.
