Description

Golden and crunchy on the outside, soft and cheesy inside—these broccoli and cheese croquettes are the perfect healthy snack or appetizer, served with a tangy yogurt dip.


Ingredients

  • 2 cups steamed broccoli, finely chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup breadcrumbs (plus more for coating)
  • 1/4 cup grated Parmesan
  • 1 egg
  • 1 clove garlic, minced
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • Salt to taste
  • Olive oil spray (for baking)
  • 1/2 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 tbsp finely chopped red onion
  • 1 tbsp fresh parsley, chopped
  • Salt and pepper to taste
  • Drizzle of olive oil

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine chopped broccoli, cheddar, breadcrumbs, Parmesan, egg, garlic, onion powder, pepper, and salt. Mix well until a moldable mixture forms.
  3. Shape into oval croquettes and roll them in extra breadcrumbs to coat.
  4. Arrange croquettes on the baking sheet and spray lightly with olive oil.
  5. Bake for 20–25 minutes, turning once halfway, until golden brown and crispy.
  6. For the dip, mix Greek yogurt, lemon juice, red onion, parsley, salt, pepper, and a drizzle of olive oil in a bowl. Refrigerate until ready to serve.
  7. Serve croquettes warm with the yogurt dip.

Notes

  • Use gluten-free breadcrumbs to make this recipe gluten-free.
  • Chill the mixture for 15 minutes if it feels too soft to shape.
  • Can be air-fried or pan-fried for variation.
