Chicken and Seasoning

  • 2 tablespoons avocado oil
  • 4 chicken breasts (approximately 2 pounds)
  • Salt (to taste)
  • Freshly cracked black pepper (to taste)

Sauce

  • ½ cup dry white wine (or ½ cup chicken broth)
  • 1 cup chicken broth
  • 1 5.2-ounce wheel Boursin cheese (any flavor, cut into 4 or 6 pieces)
  • 1 tablespoon chopped chives (optional)

Instructions

  1. Prepare and Season Chicken: Heat 2 tablespoons of avocado oil in a large skillet over medium heat, swirling to coat the pan evenly. While the skillet is heating, generously season both sides of each chicken breast with salt and freshly cracked black pepper to taste.
  2. Pan-Sear Chicken: When the oil is hot and shimmering, place the chicken breasts in the skillet. Sear for 4 minutes on one side without moving them. Flip the chicken breasts, add an additional tablespoon of avocado oil to the skillet, then sear for another 4 minutes on the other side until the chicken is cooked through and no longer pink inside. If the chicken breasts are particularly large or remain soft after 8 minutes, cover the skillet with a lid, reduce heat to low, and continue cooking, checking every 2 minutes until the chicken is firm and springy to the touch.
  3. Rest Chicken and Clean Skillet: Transfer the fully cooked chicken breasts to a plate and set aside. If the skillet has charred bits or dark spots, wipe it clean with a paper towel to prevent bitterness in the sauce.
  4. Deglaze the Skillet: Pour ½ cup of dry white wine (or chicken broth) into the hot skillet to deglaze it. Use a spatula to scrape up any stuck bits from the bottom of the pan. Increase the heat and bring the liquid to a boil.
  5. Reduce Sauce Base: Add 1 cup of chicken broth to the skillet and continue cooking until the liquid is reduced by approximately 50%, intensifying the flavor and thickening the sauce.
  6. Add and Melt Boursin Cheese: Add the pieces of Boursin cheese to the reduced liquid. Whisk continuously until the cheese has melted completely and the sauce is smooth and creamy.
  7. Combine Chicken and Sauce: Return the cooked chicken breasts to the skillet and spoon the creamy Boursin sauce over them. Heat just until the chicken is warmed through to preserve juiciness and flavor.
  8. Garnish and Serve: Garnish with chopped chives if desired. Serve the chicken warm with plenty of the creamy Boursin sauce, alongside mashed potatoes, pasta, mashed cauliflower, or rice for a complete meal.
