1 cup baby spinach or arugula

1 teaspoon fresh thyme leaves

1 egg (for egg wash)

Instructions

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

Lightly flour your work surface and roll out the puff pastry into a rectangle.

Spread the softened goat cheese evenly over the pastry.

Sprinkle the dried cranberries and scatter the baby greens on top.

Drizzle lightly with honey and sprinkle with fresh thyme leaves.

Starting from one long side, tightly roll the puff pastry into a log.

Slice the log into 1/2-inch thick rounds and place them cut-side up on the prepared baking sheet.
