Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) and position the oven rack in the upper third for even browning.
- Cook Bacon: In a skillet over medium heat, cook the bacon pieces until crispy, about 10 minutes. Remove bacon onto a paper towel-lined plate to drain, leaving the bacon fat in the pan for flavor.
- Brown Beef and Onions: Add lean ground beef and chopped onions to the skillet with the bacon fat. Stir occasionally and break up the beef with a spoon until browned and onions are softened, approximately 7-8 minutes. Drain excess fat, leaving a little for flavor.
- Add Garlic and Taco Seasoning: Stir in minced garlic and taco seasoning, cooking for about 1 minute to release the flavors.
- Mix in Remaining Ingredients: Turn off the heat. Stir in condensed cream of mushroom soup, sour cream, black beans, corn, diced green chilies, half of the cooked bacon, and about half a cup of shredded cheddar cheese. Mix thoroughly to combine all ingredients evenly.
- Assemble in Casserole Dish: Transfer the skillet mixture into a 9×13 inch casserole dish and spread out evenly.
- Add Toppings: Sprinkle the rest of the cheddar cheese and remaining bacon over the top. Finally, arrange the frozen tater tots evenly over the casserole surface.
- Bake: Bake uncovered in the preheated oven for 45 minutes or until the tater tots are golden brown and the cheese is melted and bubbly. Optionally, broil for a few minutes at the end to crisp up the tater tots—watch carefully to avoid burning.
- Serve: Remove from oven, garnish with chopped scallions if desired, and season with salt and pepper to taste. Serve hot and enjoy your hearty Cowboy Casserole.
