Ingredients
Scale
For the Sliders
- 1½ – 2 lbs steak (ribeye, sirloin, or flank steak recommended)
- Salt & pepper, to taste
- 1 tablespoon olive oil
- Slider buns or mini brioche rolls
- Optional toppings: cheese slices, sautéed onions, arugula, pickles
For the Cowboy Butter
- ½ cup unsalted butter, melted
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon Dijon mustard
- ½ teaspoon red pepper flakes
- 1 teaspoon lemon juice
- ½ teaspoon paprika
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Make the Cowboy Butter: In a small bowl, combine the melted butter with minced garlic, chopped parsley, Dijon mustard, red pepper flakes, lemon juice, paprika, salt, and black pepper. Stir well until all ingredients are fully incorporated. Set the mixture aside to allow the flavors to meld.
- Prep the Steak: Pat the chosen steak dry with paper towels to remove any excess moisture. Season both sides generously with salt and freshly ground black pepper to enhance the beef’s natural flavor.
- Sear the Steak: Heat the olive oil in a skillet over medium-high heat until shimmering. Place the steak in the hot pan and sear for 3–4 minutes on each side for medium-rare doneness. Adjust time if you prefer a different level of cooking. Once seared, transfer the steak to a plate and let it rest for 5–10 minutes to allow the juices to redistribute.
- Slice the Steak: After resting, slice the steak thinly against the grain which helps ensure tenderness when eating.
- Toast the Buns: Using the same skillet, place the slider buns cut side down and toast them until golden brown and slightly crispy. This should take 1–2 minutes and adds a nice texture contrast to the sliders.
- Assemble the Sliders: Place the sliced steak evenly onto the bottom halves of the toasted slider buns. Generously spoon the prepared cowboy butter over the steak slices. Add any optional toppings such as cheese, sautéed onions, arugula, or pickles. Finish by topping with the bun tops.
- Serve Immediately: Serve the sliders hot with extra cowboy butter on the side for dipping. These sliders are best enjoyed fresh for maximum juiciness and flavor.
Notes
- Use a high-quality cut of steak such as ribeye for maximum flavor and tenderness.
- Adjust the red pepper flakes quantity in the cowboy butter to control spiciness.
- Letting the steak rest after cooking prevents the juices from escaping when sliced.
- Thinner slices of steak are ideal for slider-sized sandwiches for easier eating.
- To make it dairy-free, substitute the butter in the cowboy butter with a dairy-free margarine.
- Slider buns can be replaced with mini brioche or pretzel rolls for different flavor profiles.
