Ingredients
Scale
Custard and Bread Pudding
- 4 eggs
- 3–1/2 cups 2% milk
- 2–1/2 teaspoons vanilla extract
- 4 cinnamon crunch bagels, cut into 1-inch pieces (about 10 cups)
Topping
- 1/4 cup butter, cubed
- 1/2 cup packed brown sugar
- Confectioners’ sugar, optional (for dusting)
Instructions
- Prepare the custard and assemble: In a large bowl, whisk together the eggs, 2% milk, and vanilla extract until well combined. Gently fold in the cubed cinnamon crunch bagels, ensuring they are fully coated. Transfer this mixture into a greased 13×9-inch baking dish. Let the mixture stand for 15 minutes to allow the bagels to soak and soften.
- Prepare the topping: While the pudding soaks, melt the cubed butter and brown sugar together in a small saucepan over medium-low heat. Stir continuously until the sugar is completely dissolved and the mixture is smooth.
- Top the pudding: Pour the warm butter and brown sugar mixture evenly over the soaked bagel custard in the baking dish.
- Bake the bread pudding: Place the baking dish in a preheated oven at 350°F (175°C). Bake uncovered for 45 to 50 minutes or until the top is puffed and golden brown and the center is nearly set but still slightly jiggly.
- Rest and serve: Remove from the oven and allow the bread pudding to stand for 15 minutes. This resting time helps the custard set further. Before serving, optionally dust the top with confectioners’ sugar for a touch of sweetness and elegant presentation. Serve warm.
Notes
- Allowing the bagels to soak fully in the custard mixture is key for a moist texture.
- Use cinnamon crunch bagels to enhance the cinnamon flavor naturally in the pudding.
- Let the pudding rest after baking to ensure it firms up for easier slicing.
- For added texture, consider sprinkling chopped nuts or raisins into the custard before baking.
- Store any leftovers covered in the refrigerator and reheat gently before serving.
