Description

Soft Medjool dates filled with crunchy pecans and drizzled in silky melted chocolate—these no-bake treats taste just like classic turtles, but healthier and naturally sweetened.


Ingredients

  • 12 Medjool dates, pitted
  • 24 whole pecan halves
  • 1/2 cup dark or milk chocolate chips
  • 1 teaspoon coconut oil (optional, for smoother melting)
  • Pinch of sea salt (optional)

Instructions

  1. Line a baking sheet with a silicone baking mat or parchment paper.
  2. Slice each date lengthwise, removing the pits if not already pitted.
  3. Gently stuff each date with two pecan halves, pressing them slightly so they peek out.
  4. In a microwave-safe bowl, melt the chocolate chips with coconut oil in 20-second intervals, stirring between each, until smooth.
  5. Using a spoon, drizzle melted chocolate over each stuffed date, covering partially or fully based on preference.
  6. Optional: sprinkle a tiny pinch of sea salt over the top of each.
  7. Place the tray in the fridge or freezer for 15–20 minutes to set the chocolate.
  8. Serve chilled or at room temperature.
  9. Store leftovers in an airtight container in the fridge for up to one week.
