- 12 Medjool dates, pitted
- 24 whole pecan halves
- 1/2 cup dark or milk chocolate chips
- 1 teaspoon coconut oil (optional, for smoother melting)
- Pinch of sea salt (optional)
Instructions
- Line a baking sheet with a silicone baking mat or parchment paper.
- Slice each date lengthwise, removing the pits if not already pitted.
- Gently stuff each date with two pecan halves, pressing them slightly so they peek out.
- In a microwave-safe bowl, melt the chocolate chips with coconut oil in 20-second intervals, stirring between each, until smooth.
- Using a spoon, drizzle melted chocolate over each stuffed date, covering partially or fully based on preference.
- Optional: sprinkle a tiny pinch of sea salt over the top of each.
- Place the tray in the fridge or freezer for 15–20 minutes to set the chocolate.
- Serve chilled or at room temperature.
- Store leftovers in an airtight container in the fridge for up to one week.
