- 1 teaspoon vanilla extract
- 1/2 cup almond flour
- 1 1/2 cups dark chocolate chips
- 1 tablespoon coconut oil
- 1/3 cup crushed roasted peanuts (for coating)
Instructions
- In a bowl, mix together peanut butter, maple syrup, sea salt, and vanilla.
- Stir in almond flour until a soft, workable dough forms. Chill in the fridge for 20 minutes.
- Scoop dough and roll into 1-inch balls. Place on a parchment-lined tray and freeze for 15 minutes.
- Melt dark chocolate and coconut oil in a microwave-safe bowl in 20-second increments, stirring until smooth.
- Dip each chilled ball into the melted chocolate, coating evenly. Use a fork to lift and tap off excess.
- Immediately roll or sprinkle each truffle with crushed peanuts.
- Place on parchment to set at room temperature or refrigerate until firm.
Notes
- Use refined coconut oil to avoid coconut flavor if preferred.
- Store truffles in an airtight container in the fridge for up to a week.
