Description

These Chocolate Covered Raspberries are a bite-sized treat made with fresh raspberries filled with white chocolate and dipped in dark chocolate. Sweet, tangy, and perfect for a dairy-free, gluten-free dessert or snack.


Ingredients

  1. Fresh raspberries
  2. White chocolate (dairy-free or stevia-sweetened options like Pascha or Lily’s)
  3. Dark chocolate (dairy-free chips or bar)

Instructions

  1. Prep Raspberries: Gently wash and dry raspberries using paper towels.

  2. Melt White Chocolate: In a microwave-safe bowl or double boiler, melt white chocolate in 30-second intervals until smooth.

  3. Coat Raspberries: Use a toothpick to hold the bottom of each raspberry and fill the center with melted white chocolate. Place on a parchment-lined baking sheet.

  4. Freeze: Freeze for a few minutes until the white chocolate is set.

  5. Melt Dark Chocolate: Melt dark chocolate in the microwave, stirring every 30 seconds.

  6. Dip in Dark Chocolate: Use a new toothpick to dip the white chocolate-filled raspberries into the dark chocolate.

  7. Freeze Again: Return to freezer for 3–4 minutes until the chocolate sets.

  8. Serve: Let sit at room temperature for 5 minutes before enjoying.
