Scale
- 3 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 packet (2 1/4 tsp) active dry yeast
- 1 teaspoon salt
- 3 large eggs
- 1/2 cup warm milk
- 1/2 cup unsalted butter, softened
- 3/4 cup mini chocolate chips
- 1 egg yolk (for egg wash)
- 1 tablespoon milk (for egg wash)
Instructions
- In a bowl, mix warm milk and yeast. Let sit for 5–10 minutes until foamy.
- In a stand mixer with the dough hook, combine flour, sugar, and salt. Add eggs and yeast mixture. Mix on low speed until the dough starts to come together.
- Gradually add softened butter, mixing until smooth and elastic (about 8–10 minutes).
- Fold in mini chocolate chips. Cover and let the dough rise in a warm place for 1–2 hours, or until doubled in size.
- Punch down dough and divide into 2–3 equal portions. Shape each into a baguette-style log.
- Place on a lined baking sheet and let rise for another 30–45 minutes.
- Preheat oven to 375°F (190°C). Mix egg yolk and milk for the egg wash and brush over the baguettes.
- Bake for 20–25 minutes or until golden and shiny.
- Cool slightly before serving.
Notes
- Ensure butter is fully softened for easy incorporation into the dough.
- Mini chocolate chips distribute more evenly than regular chips.
- Leftovers can be wrapped and stored at room temperature for 1–2 days.
