Description

Decadent bite-sized chocolate truffles with a sweet maraschino cherry center, coated in rich dark chocolate and topped with a glossy cherry for an elegant indulgence.


Ingredients

  • 1 1/2 cups semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1/4 cup unsalted butter
  • 1 teaspoon pure vanilla extract
  • 20 maraschino cherries, drained and patted dry
  • 1 cup chocolate cookie crumbs
  • 8 oz dark chocolate, melted (for coating)
  • Extra chocolate drizzle (optional)

Instructions

  1. In a small saucepan, heat the heavy cream and butter over medium heat until just simmering. Remove from heat and pour over the semi-sweet chocolate chips in a heatproof bowl.
  2. Let sit for 2 minutes, then stir until smooth and glossy. Stir in vanilla extract.
  3. Cover and refrigerate the chocolate mixture for 1–2 hours, or until firm enough to scoop.
  4. Using a spoon or small scoop, portion out the chocolate mixture and flatten slightly in your palm. Place a maraschino cherry in the center and shape the chocolate mixture around it to form a ball.
  5. Roll each ball in chocolate cookie crumbs to help them hold their shape. Place on a parchment-lined tray and freeze for 15 minutes.
  6. Dip each ball into melted dark chocolate, letting excess drip off, then place back on the tray.
  7. Drizzle with extra chocolate if desired and top each with a whole maraschino cherry.
  8. Let set at room temperature or refrigerate until firm before serving.

Notes

  • Ensure cherries are well-drained and patted dry to prevent chocolate from seizing.
  • For a smoother coating, temper the dark chocolate before dipping.
  • These truffles can be made ahead and stored in the fridge for up to a week.
