Description
Decadent bite-sized chocolate truffles with a sweet maraschino cherry center, coated in rich dark chocolate and topped with a glossy cherry for an elegant indulgence.

- 1 1/2 cups semi-sweet chocolate chips
- 1/2 cup heavy cream
- 1/4 cup unsalted butter
- 1 teaspoon pure vanilla extract
- 20 maraschino cherries, drained and patted dry
- 1 cup chocolate cookie crumbs
- 8 oz dark chocolate, melted (for coating)
- Extra chocolate drizzle (optional)
Instructions
- In a small saucepan, heat the heavy cream and butter over medium heat until just simmering. Remove from heat and pour over the semi-sweet chocolate chips in a heatproof bowl.
- Let sit for 2 minutes, then stir until smooth and glossy. Stir in vanilla extract.
- Cover and refrigerate the chocolate mixture for 1–2 hours, or until firm enough to scoop.
- Using a spoon or small scoop, portion out the chocolate mixture and flatten slightly in your palm. Place a maraschino cherry in the center and shape the chocolate mixture around it to form a ball.
- Roll each ball in chocolate cookie crumbs to help them hold their shape. Place on a parchment-lined tray and freeze for 15 minutes.
- Dip each ball into melted dark chocolate, letting excess drip off, then place back on the tray.
- Drizzle with extra chocolate if desired and top each with a whole maraschino cherry.
- Let set at room temperature or refrigerate until firm before serving.
Notes
- Ensure cherries are well-drained and patted dry to prevent chocolate from seizing.
- For a smoother coating, temper the dark chocolate before dipping.
- These truffles can be made ahead and stored in the fridge for up to a week.
