Description

Crispy baked baguette topped with garlic butter, melted mozzarella, Parmesan, and vibrant homemade chimichurri sauce for a spicy, herby twist on classic cheesy bread.


Ingredients

  • 1 large French baguette, halved lengthwise
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup unsalted butter, softened
  • 3 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup fresh parsley, finely chopped
  • 1/4 cup fresh cilantro, finely chopped
  • 1 small red chili or red pepper, minced
  • 2 tablespoons red wine vinegar
  • 1/3 cup olive oil
  • 1 clove garlic, minced (for chimichurri)
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, mix the softened butter with minced garlic. Spread the garlic butter generously over both halves of the baguette.
  3. In another bowl, combine parsley, cilantro, red chili, red wine vinegar, olive oil, garlic, salt, and black pepper. Let sit for 10 minutes to marinate.
  4. Sprinkle mozzarella evenly over the bread halves. Spoon chimichurri over the cheese, reserving some for serving.
  5. Top with grated Parmesan cheese.
  6. Bake for 12–15 minutes, or until golden and bubbly.
  7. Slice into triangles and serve warm with extra chimichurri drizzle.

Notes

  • For extra crispiness, broil the bread for 1–2 minutes at the end of baking.
  • Substitute cilantro with more parsley if preferred.
  • Make chimichurri a few hours ahead to enhance flavor.
