- 1 large French baguette, halved lengthwise
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup unsalted butter, softened
- 3 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 1/2 cup fresh parsley, finely chopped
- 1/4 cup fresh cilantro, finely chopped
- 1 small red chili or red pepper, minced
- 2 tablespoons red wine vinegar
- 1/3 cup olive oil
- 1 clove garlic, minced (for chimichurri)
- Salt and black pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a small bowl, mix the softened butter with minced garlic. Spread the garlic butter generously over both halves of the baguette.
- In another bowl, combine parsley, cilantro, red chili, red wine vinegar, olive oil, garlic, salt, and black pepper. Let sit for 10 minutes to marinate.
- Sprinkle mozzarella evenly over the bread halves. Spoon chimichurri over the cheese, reserving some for serving.
- Top with grated Parmesan cheese.
- Bake for 12–15 minutes, or until golden and bubbly.
- Slice into triangles and serve warm with extra chimichurri drizzle.
Notes
- For extra crispiness, broil the bread for 1–2 minutes at the end of baking.
- Substitute cilantro with more parsley if preferred.
- Make chimichurri a few hours ahead to enhance flavor.
