  • 1 can chickpeas, drained and rinsed
  • 2 cups cauliflower florets
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • Juice of 1 lime
  • 1/4 cup dairy-free yogurt or plain yogurt
  • 1 tbsp lime juice
  • 1 tbsp chopped fresh cilantro
  • Pinch of salt
  • 4 large wraps or tortillas
  • 1 cup shredded lettuce
  • 1/2 cup sliced red onion

Instructions

  1. Preheat Oven Preheat your oven to 400°F (200°C) to prepare for roasting the chickpeas and cauliflower.
  2. Season Chickpeas and Cauliflower In a large bowl, toss the drained chickpeas and cauliflower florets with olive oil, chili powder, smoked paprika, garlic powder, salt, and black pepper until evenly coated.
  3. Roast Mixture Spread the seasoned chickpeas and cauliflower evenly on a baking sheet. Roast in the oven for 20–25 minutes until they are golden brown and crispy on the edges.
  4. Add Lime Juice Once roasted, immediately squeeze fresh lime juice over the chickpea and cauliflower mixture to infuse bright citrus flavor.
  5. Prepare Lime Dressing In a small bowl, whisk together dairy-free or plain yogurt, lime juice, chopped cilantro, and a pinch of salt to create a tangy dressing.
  6. Warm Tortillas Slightly warm the wraps or tortillas to make them pliable and enhance flavor.
  7. Assemble Wraps Lay each tortilla flat and layer with shredded lettuce, the roasted chickpea and cauliflower mixture, sliced red onion, then drizzle the lime dressing over the top.
  8. Roll and Serve Roll the wraps tightly to secure the filling and serve immediately for a fresh, flavorful meal.
