- 1 lb large shrimp, peeled and deveined (tails on)
- 2 tablespoons olive oil
- 2 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 3 garlic cloves, minced
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- Salt and black pepper, to taste
- Fresh chopped cilantro or parsley, for garnish
- Lime wedges, for serving
- Wooden or metal skewers
Instructions
- In a large bowl, whisk together olive oil, lime juice, lime zest, garlic, chili powder, paprika, cayenne (if using), salt, and pepper.
- Add shrimp and toss to coat evenly. Cover and marinate in the refrigerator for 20–30 minutes.
- Preheat grill or grill pan to medium-high heat. If using wooden skewers, soak them in water for 15 minutes.
- Thread shrimp onto skewers (about 4–5 per skewer).
- Grill shrimp for 2–3 minutes per side, or until opaque and slightly charred.
- Transfer to a serving platter, garnish with chopped herbs and serve with lime wedges.
Notes
- Do not over-marinate the shrimp, as the acid in the lime juice can start to cook them.
- Use metal skewers for easier grilling and no soaking time.
- Great served with rice, salad, or tortillas for tacos.
