Description

Juicy shrimp marinated in a zesty blend of lime juice, garlic, and chili spices, then grilled to perfection on skewers—fresh, flavorful, and perfect for summer gatherings.


Ingredients

  • 1 lb large shrimp, peeled and deveined (tails on)
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 3 garlic cloves, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper, to taste
  • Fresh chopped cilantro or parsley, for garnish
  • Lime wedges, for serving
  • Wooden or metal skewers

Instructions

  1. In a large bowl, whisk together olive oil, lime juice, lime zest, garlic, chili powder, paprika, cayenne (if using), salt, and pepper.
  2. Add shrimp and toss to coat evenly. Cover and marinate in the refrigerator for 20–30 minutes.
  3. Preheat grill or grill pan to medium-high heat. If using wooden skewers, soak them in water for 15 minutes.
  4. Thread shrimp onto skewers (about 4–5 per skewer).
  5. Grill shrimp for 2–3 minutes per side, or until opaque and slightly charred.
  6. Transfer to a serving platter, garnish with chopped herbs and serve with lime wedges.

Notes

  • Do not over-marinate the shrimp, as the acid in the lime juice can start to cook them.
  • Use metal skewers for easier grilling and no soaking time.
  • Great served with rice, salad, or tortillas for tacos.
