Description

A comforting Chicken and Stuffing Casserole combining shredded chicken, creamy soup, sour cream, and mixed vegetables topped with buttery stuffing. Perfect for a hearty family dinner, this casserole is baked to golden perfection and offers a delightful mix of textures and flavors.

Ingredients

Scale

Chicken Mixture

  • 3 cups cooked chicken, shredded (rotisserie chicken works well)
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 1 cup chicken broth
  • 1 cup mixed vegetables (peas, carrots, corn, or your choice)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Stuffing Topping

  • 1 package (6 oz) stuffing mix
  • 2 tablespoons butter, melted

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it reaches the proper temperature for baking the casserole evenly.
  2. Mix Chicken Ingredients: In a large bowl, combine the shredded cooked chicken, cream of chicken soup, sour cream, chicken broth, mixed vegetables, garlic powder, onion powder, salt, and pepper. Stir thoroughly until all ingredients are well incorporated.
  3. Prepare Stuffing: In a separate bowl, follow the package instructions to prepare the stuffing mix, then mix in the melted butter to add richness and help it brown nicely during baking.
  4. Assemble Casserole: Grease a 9×13 inch baking dish lightly. Spread the chicken mixture evenly across the bottom of the dish, creating a uniform layer.
  5. Add Stuffing Topping: Evenly spread the prepared stuffing mixture over the chicken layer, covering it completely to create a crispy top.
  6. Bake: Place the baking dish in the preheated oven and bake for 45 minutes, until the casserole is hot and bubbly throughout and the stuffing topping turns golden brown and crisp.
  7. Cool and Serve: Allow the casserole to cool for a few minutes after baking to set slightly, making it easier to serve and enjoy.

Notes

  • Using rotisserie chicken can significantly reduce prep time.
  • Feel free to swap mixed vegetables according to your preference or what’s available.
  • For a crispier topping, you can broil the casserole for an additional 2-3 minutes after baking, watching carefully to avoid burning.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven.
  • To make this gluten-free, use a gluten-free stuffing mix.
