Description

A refreshing parfait combining cherry purée, creamy chia pudding, and vanilla yogurt, layered for a marbled look and topped with whole cherries. Perfect as a healthy breakfast, snack, or light dessert.


Ingredients

  • 1 cup fresh cherries, pitted and halved (plus more for topping)
  • 1 cup unsweetened almond milk (or milk of choice)
  • 1/2 cup Greek-style vanilla yogurt (or non-dairy yogurt)
  • 3 tablespoons chia seeds
  • 1 tablespoon maple syrup (optional)
  • 1/2 teaspoon pure vanilla extract
  • Pinch of salt
  • Whole cherries (with stems) for garnish
  • Sliced cherries for garnish
  • Extra vanilla yogurt for garnish
  • Chia seeds for garnish

Instructions

  1. In a blender, combine the cherries, almond milk, vanilla extract, maple syrup, and a pinch of salt. Blend until smooth.
  2. Pour the mixture into a bowl or jar. Stir in chia seeds and mix well.
  3. Let the mixture rest for 5 minutes, then stir again to prevent clumping. Cover and refrigerate for at least 2 hours or overnight until thickened.
  4. When ready to serve, layer the cherry chia pudding into glasses.
  5. Add a layer of vanilla yogurt, then gently stir to create a marbled look.
  6. Top with whole cherries, cherry halves, and a sprinkle of chia seeds for added texture and visual appeal.

Notes

  • Use frozen cherries if fresh are not in season, but thaw them before blending.
  • Adjust sweetness with more or less maple syrup to taste.
  • For a thicker pudding, increase the chia seeds slightly.
  • Best served chilled for optimal texture and flavor.
