- 1 cup unsweetened almond milk (or milk of choice)
- 1/2 cup Greek-style vanilla yogurt (or non-dairy yogurt)
- 3 tablespoons chia seeds

Instructions
- In a blender, combine the cherries, almond milk, vanilla extract, maple syrup, and a pinch of salt. Blend until smooth.
- Pour the mixture into a bowl or jar. Stir in chia seeds and mix well.
- Let the mixture rest for 5 minutes, then stir again to prevent clumping. Cover and refrigerate for at least 2 hours or overnight until thickened.
- When ready to serve, layer the cherry chia pudding into glasses.
- Add a layer of vanilla yogurt, then gently stir to create a marbled look.
- Top with whole cherries, cherry halves, and a sprinkle of chia seeds for added texture and visual appeal.
Notes
- Use frozen cherries if fresh are not in season, but thaw them before blending.
- Adjust sweetness with more or less maple syrup to taste.
- For a thicker pudding, increase the chia seeds slightly.
- Best served chilled for optimal texture and flavor.
