This Cheesy Potato Egg Scramble is the ultimate quick and hearty breakfast recipe! Made with crispy potatoes, fluffy scrambled eggs, melted cheddar cheese, and optional ham or bacon, it’s a satisfying way to start your day. Ready in just 30 minutes! Keywords: cheesy potato scramble, egg breakfast recipe, quick skillet breakfast, potato and egg skillet.

Ingredients

  • 4 medium potatoes, diced

  • 1 cup shredded cheddar cheese

  • 4 large eggs

  • 1/2 cup milk

  • 1/2 cup cooked ham or bacon, chopped (optional)

  • 1/4 cup green onions or chives, chopped

  • 2 tablespoons butter

  • Salt and pepper to taste

Instructions

  • Boil diced potatoes in salted water for 10-15 minutes or until fork-tender. Drain and set aside.

  • In a large skillet, melt butter over medium heat. Add potatoes and cook until golden and slightly crispy, about 5-7 minutes.

  • Add chopped ham or bacon, if using, and cook for another 2-3 minutes.

  • Whisk together eggs, milk, salt, and pepper in a bowl.

  • Pour the egg mixture over the potatoes and gently stir. Let cook for 5 minutes, stirring occasionally.

  • Sprinkle cheddar cheese on top, cover the skillet, and cook for 2-3 more minutes until the cheese is melted.

  • Garnish with green onions or chives and serve warm.

Notes

  • For a vegetarian version, omit the ham or bacon.

  • Use leftover roasted potatoes to speed up the process.

  • Try adding bell peppers or mushrooms for extra veggies.
