Description

A rich and creamy Cheesy Garlic Parmesan Spaghetti recipe that combines perfectly cooked spaghetti with a luscious garlic-infused Parmesan and mozzarella sauce. Ready in just 30 minutes, this comforting meal is accented with fresh parsley and extra Parmesan for an irresistible finish.

Ingredients

Units Scale

Pasta

  • 8 oz spaghetti

Cheesy Garlic Sauce

  • 4 cloves fresh garlic, minced
  • 1/2 cup grated Parmesan cheese (plus extra for topping)
  • 1 cup shredded mozzarella cheese
  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Garnish

  • Fresh parsley, chopped

Instructions

  1. Cook the spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, approximately 8-10 minutes. Drain the pasta, reserving about ½ cup of the pasta water for later use.
  2. Prepare the garlic sauce: In a large skillet, heat unsalted butter and olive oil over medium heat. Add the minced garlic and sauté gently for 1-2 minutes until fragrant and golden brown, taking care not to burn the garlic.
  3. Add cheese and pasta water: Reduce the heat to low, then add the grated Parmesan and shredded mozzarella cheeses to the skillet. Stir continuously until the cheeses melt and form a creamy sauce. Gradually add the reserved pasta water, stirring to reach your desired sauce consistency.
  4. Combine pasta and sauce: Add the cooked spaghetti to the skillet, tossing thoroughly to coat the pasta evenly with the cheesy garlic sauce. Season with salt and freshly cracked black pepper to taste.
  5. Serve: Divide the pasta onto plates and garnish with chopped fresh parsley and a sprinkle of extra Parmesan cheese before serving.

Notes

  • Be careful not to burn the garlic while sautéing as it can turn bitter.
  • Adjust the amount of reserved pasta water to control the sauce thickness.
  • Use freshly grated Parmesan for the best flavor and texture.
  • For a lighter version, reduce the butter or cheese quantities slightly.
  • This dish is best served immediately for optimal creaminess and texture.
