Pasta
- 8 oz spaghetti
Cheesy Garlic Sauce
- 4 cloves fresh garlic, minced
- 1/2 cup grated Parmesan cheese (plus extra for topping)
- 1 cup shredded mozzarella cheese
- 2 tbsp unsalted butter
- 2 tbsp olive oil
- Salt and pepper, to taste
Garnish
- Fresh parsley, chopped
Instructions
- Cook the spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, approximately 8-10 minutes. Drain the pasta, reserving about ½ cup of the pasta water for later use.
- Prepare the garlic sauce: In a large skillet, heat unsalted butter and olive oil over medium heat. Add the minced garlic and sauté gently for 1-2 minutes until fragrant and golden brown, taking care not to burn the garlic.
- Add cheese and pasta water: Reduce the heat to low, then add the grated Parmesan and shredded mozzarella cheeses to the skillet. Stir continuously until the cheeses melt and form a creamy sauce. Gradually add the reserved pasta water, stirring to reach your desired sauce consistency.
- Combine pasta and sauce: Add the cooked spaghetti to the skillet, tossing thoroughly to coat the pasta evenly with the cheesy garlic sauce. Season with salt and freshly cracked black pepper to taste.
- Serve: Divide the pasta onto plates and garnish with chopped fresh parsley and a sprinkle of extra Parmesan cheese before serving.
Notes
- Be careful not to burn the garlic while sautéing as it can turn bitter.
- Adjust the amount of reserved pasta water to control the sauce thickness.
- Use freshly grated Parmesan for the best flavor and texture.
- For a lighter version, reduce the butter or cheese quantities slightly.
- This dish is best served immediately for optimal creaminess and texture.
