- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper to taste
- 1 1/2 cups shredded mozzarella or Monterey Jack cheese
- 8 flour tortillas or egg roll wrappers
- 1 egg (for sealing edges)
- Fresh parsley or cilantro for garnish
- Oil for frying or brushing if baking
Instructions
- In a skillet, heat olive oil over medium heat. Add onion and garlic; sauté until soft.
- Add ground beef and cook until browned, breaking it up with a spoon. Stir in chili powder, cumin, salt, and pepper. Cook until well seasoned and no liquid remains. Let cool slightly.
- Lay out tortillas or wrappers. Place a spoonful of beef and a sprinkle of cheese on one end. Roll tightly, sealing the edge with beaten egg.
- For frying: Heat oil in a deep pan and fry rolls until golden and crisp.
- For baking: Preheat oven to 400°F (200°C). Place rolls on a baking sheet, brush with oil, and bake for 15–20 minutes until crispy.
- Serve warm, garnished with chopped parsley or cilantro.

- Use pre-cooked shredded chicken or beans as a variation.
- Serve with salsa, sour cream, or guacamole for dipping.
- Freeze assembled taquitos before cooking for an easy make-ahead snack.
