Description

Warm flour tortillas filled with seasoned ground beef, sweet corn, juicy tomatoes, melted cheese, and fresh herbs, wrapped and grilled for a hearty, flavor-packed bite.


Ingredients

  • 1 lb (450 g) ground beef
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup canned corn, drained
  • 1 cup diced tomatoes
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté for 2 minutes until softened.
  2. Add ground beef and cook until browned, breaking it up with a spoon. Drain excess fat.
  3. Stir in corn, tomatoes, chili powder, smoked paprika, cumin, salt, and pepper. Cook for 5 minutes until heated through.
  4. Lay tortillas on a flat surface. Sprinkle each with cheddar cheese, then spoon beef mixture on top.
  5. Roll tortillas tightly, tucking in the sides.
  6. Heat a clean skillet or grill pan and toast burritos for 1–2 minutes per side until golden and cheese is melted.
  7. Garnish with fresh cilantro and serve warm with salsa or sour cream.

Notes

  • Use pepper jack cheese for a spicier version.
  • Burritos can be prepped ahead and refrigerated, then grilled when ready to serve.
  • Serve with guacamole or a side salad for a complete meal.
