- 1 lb (450 g) ground beef
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup canned corn, drained
- 1 cup diced tomatoes
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 4 large flour tortillas
- Fresh cilantro, chopped, for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté for 2 minutes until softened.
- Add ground beef and cook until browned, breaking it up with a spoon. Drain excess fat.
- Stir in corn, tomatoes, chili powder, smoked paprika, cumin, salt, and pepper. Cook for 5 minutes until heated through.
- Lay tortillas on a flat surface. Sprinkle each with cheddar cheese, then spoon beef mixture on top.
- Roll tortillas tightly, tucking in the sides.
- Heat a clean skillet or grill pan and toast burritos for 1–2 minutes per side until golden and cheese is melted.
- Garnish with fresh cilantro and serve warm with salsa or sour cream.
Notes
- Use pepper jack cheese for a spicier version.
- Burritos can be prepped ahead and refrigerated, then grilled when ready to serve.
- Serve with guacamole or a side salad for a complete meal.
