- 1 lb ground beef
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/2 teaspoon oregano
- 1/4 teaspoon chili flakes (optional)
- 1 1/2 cups shredded mozzarella cheese
- 12 egg roll wrappers
- 1 egg (beaten, for sealing)
- Vegetable oil, for frying
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a skillet over medium heat. Sauté onion until soft, then add garlic and cook for 1 minute.
- Add ground beef, paprika, salt, pepper, oregano, and chili flakes. Cook until beef is browned and fully cooked. Drain excess fat and let the mixture cool slightly.
- Mix the beef with shredded mozzarella cheese.
- Lay an egg roll wrapper flat. Spoon about 2 tablespoons of the beef-cheese mixture near one edge. Roll tightly, folding in the sides as you go, and seal the end with beaten egg.
- Heat vegetable oil in a deep skillet or fryer to 350°F (175°C). Fry rolls in batches until golden brown and crispy, about 3–4 minutes per side.
- Drain on paper towels. Garnish with chopped parsley and serve hot with dipping sauce of choice.
Notes
- Use pre-cooked beef to save prep time.
- Try adding a little shredded cheddar for extra cheese flavor.
- Freeze before frying for a quick make-ahead snack.
