Description

These cheesy baked potato balls are crispy on the outside and gooey on the inside, packed with mashed potatoes, cheddar, herbs, and a touch of Parmesan—perfect for snacks, appetizers, or party platters.


Ingredients

  • 2 cups mashed potatoes (cold, firm texture)
  • 1 1/2 cups shredded cheddar cheese
  • 1/4 cup grated Parmesan
  • 2 tablespoons chopped parsley
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1/2 cup breadcrumbs (optional for extra crispiness)
  • Olive oil spray or brush for baking

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking tray with parchment paper.
  2. In a bowl, mix mashed potatoes, cheddar, Parmesan, parsley, garlic powder, salt, and pepper until well combined.
  3. Scoop small portions and roll into bite-sized balls using your hands. If desired, roll them in breadcrumbs for a crispier texture.
  4. Place the balls on the prepared tray and lightly spray or brush with olive oil.
  5. Bake for 20–25 minutes, turning halfway through, until golden and crispy.
