Description
Golden-brown soft pretzels filled with melted cheese and topped with flaky sea salt and rosemary. These savory, chewy snacks are perfect for entertaining or cozy snacking.

- 1 1/2 cups warm water (110°F)
- 1 packet active dry yeast (2 1/4 tsp)
- 1 tbsp granulated sugar
- 4 cups all-purpose flour
- 1 tsp salt
- 2 tbsp unsalted butter, melted
- 8 oz mozzarella or cheddar cheese, cut into sticks
- 10 cups water
- 2/3 cup baking soda
- 1 egg yolk + 1 tbsp water (for egg wash)
- Coarse sea salt, for topping
- Fresh rosemary leaves, for garnish
Instructions
- In a large bowl, combine warm water, sugar, and yeast. Let sit for 5 minutes until foamy.
- Add flour, salt, and melted butter. Mix until a dough forms, then knead on a floured surface for 5–7 minutes until smooth.
- Place dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
- Preheat oven to 450°F (230°C). Line two baking sheets with parchment paper.
- Punch down dough and divide into 8 equal pieces. Roll each piece into a rope, flatten slightly, and place a cheese stick inside. Fold and pinch to seal, then shape into a pretzel.
- In a large pot, bring water and baking soda to a boil. Gently boil each pretzel for 30 seconds, then place on prepared sheet.
- Brush with egg wash, sprinkle with coarse salt and rosemary.
- Bake for 12–15 minutes or until deep golden brown and cheese is bubbling.
- Serve warm and melty, straight from the oven.
Notes
- Make sure to seal the dough well around the cheese to prevent leakage during baking.
- For extra flavor, mix garlic powder or chili flakes into the dough.
- Use parchment to prevent sticking and ease cleanup.
