Description

Crispy on the outside and creamy on the inside, these cheddar garlic potato bites are the ultimate comfort snack. Made with mashed potatoes, sharp cheddar, and aromatic herbs, they’re baked or air-fried to golden perfection.


Ingredients

  • 2 cups mashed potatoes (cold and firm)
  • 1 cup sharp cheddar cheese, shredded
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 teaspoon onion powder
  • 2 tablespoons chopped parsley (plus extra for garnish)
  • 1/4 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup all-purpose flour
  • 1 egg, beaten
  • 1/2 cup breadcrumbs (panko preferred)
  • Cooking spray or a bit of oil for brushing

Instructions

  1. Preheat oven to 400°F (200°C) or set air fryer to 375°F (190°C).
  2. In a large mixing bowl, combine mashed potatoes, cheddar, Parmesan, garlic, onion powder, paprika, parsley, salt, and pepper. Mix until fully incorporated.
  3. Scoop out about 1 tablespoon of the mixture and roll into a ball. Repeat with the rest of the mixture.
  4. Roll each ball lightly in flour, then dip into beaten egg, and coat with breadcrumbs.
  5. Place on a parchment-lined baking tray or air fryer basket. Lightly spray or brush with oil.
  6. Bake for 18–22 minutes or air fry for 12–15 minutes, turning halfway through, until golden brown and crispy.
  7. Garnish with extra parsley and serve hot with your favorite dipping sauce.

Notes

  • Ensure mashed potatoes are cold and firm for easier shaping.
  • Use smoked paprika for a deeper flavor twist.
  • Can be made ahead and frozen before baking or air-frying.
