- 1 sheet shortcrust pastry (or 8 mini tart shells)
- 2 large onions, thinly sliced
- 1 tbsp olive oil
- 1 tbsp butter
- 1 tsp sugar
- 5 oz goat cheese, softened
- 2 large eggs
- 1/2 cup heavy cream
- Salt and black pepper to taste
- Fresh thyme, for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- If using a sheet of pastry, cut and press it into greased mini tart pans. Prick the bottoms with a fork and blind bake for 10 minutes. Set aside.
- In a large skillet, heat olive oil and butter over medium-low heat. Add sliced onions and sugar. Cook slowly for 20–25 minutes, stirring occasionally, until deeply golden and caramelized. Remove from heat.
- In a bowl, whisk together eggs, heavy cream, salt, and pepper.
- Distribute caramelized onions evenly among the tartlets. Crumble goat cheese on top, then pour the egg mixture to fill each shell.
- Bake for 20–25 minutes or until set and lightly golden on top.
- Garnish with fresh thyme sprigs and serve warm.
Notes
- You can prepare the caramelized onions a day ahead and refrigerate.
- Use store-bought mini tart shells to save time.
- Add a pinch of nutmeg to the egg mixture for a warm depth of flavor.
