Description

Buttery, flaky tart shells filled with creamy goat cheese and sweet golden caramelized onions, finished with a sprig of fresh thyme—these elegant mini tartlets are the perfect savory bite for holiday gatherings or cozy winter nights.


Ingredients

  • 1 sheet shortcrust pastry (or 8 mini tart shells)
  • 2 large onions, thinly sliced
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp sugar
  • 5 oz goat cheese, softened
  • 2 large eggs
  • 1/2 cup heavy cream
  • Salt and black pepper to taste
  • Fresh thyme, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. If using a sheet of pastry, cut and press it into greased mini tart pans. Prick the bottoms with a fork and blind bake for 10 minutes. Set aside.
  3. In a large skillet, heat olive oil and butter over medium-low heat. Add sliced onions and sugar. Cook slowly for 20–25 minutes, stirring occasionally, until deeply golden and caramelized. Remove from heat.
  4. In a bowl, whisk together eggs, heavy cream, salt, and pepper.
  5. Distribute caramelized onions evenly among the tartlets. Crumble goat cheese on top, then pour the egg mixture to fill each shell.
  6. Bake for 20–25 minutes or until set and lightly golden on top.
  7. Garnish with fresh thyme sprigs and serve warm.

Notes

  • You can prepare the caramelized onions a day ahead and refrigerate.
  • Use store-bought mini tart shells to save time.
  • Add a pinch of nutmeg to the egg mixture for a warm depth of flavor.
