  • 1 lb boneless skinless chicken breasts, cubed
  • 2 tbsp olive oil
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.75 cup buffalo sauce
  • 1 tbsp butter
  • 2 cups cooked white rice
  • 1 cup corn kernels
  • 1 cup cherry tomatoes, halved
  • 0.5 cup shredded cheddar cheese
  • 0.25 cup ranch dressing
  • 2 tbsp green onions, sliced

Instructions

  1. Step 1 Heat olive oil in a large skillet over medium heat.
  2. Step 2 Add the chicken, season with salt and pepper, and cook until golden and fully cooked.
