- 1 lb boneless skinless chicken breasts, cubed
- 2 tbsp olive oil
- 0.5 tsp salt
- 0.5 tsp black pepper
- 0.75 cup buffalo sauce
- 1 tbsp butter
- 2 cups cooked white rice
- 1 cup corn kernels
- 1 cup cherry tomatoes, halved
- 0.5 cup shredded cheddar cheese
- 0.25 cup ranch dressing
- 2 tbsp green onions, sliced
Instructions
- Step 1 Heat olive oil in a large skillet over medium heat.
- Step 2 Add the chicken, season with salt and pepper, and cook until golden and fully cooked.
- Step 3 Reduce heat and stir in buffalo sauce and butter until the chicken is fully coated.
- Step 4 Simmer for 2–3 minutes until the sauce thickens slightly.
- Step 5 Divide rice between bowls and top with buffalo chicken.
- Step 6 Add corn, tomatoes, cheese, and drizzle with ranch dressing.
- Step 7 Garnish with green onions and serve warm.
