- 1 (5.2 oz) package Boursin Fine Herbs & Garlic cheese, softened
- 1–2 tablespoons chopped parsley (optional)
Instructions
- Prepare the chicken: Cut the chicken breasts in half lengthwise to create 4 thinner pieces. Season each piece evenly with garlic powder, salt, and pepper, ensuring all sides are coated for balanced flavor.
- Cook the chicken: Heat olive oil and butter in a skillet over medium-high heat. Once hot, add the chicken pieces and cook for about 5-6 minutes on each side, or until fully cooked through and golden brown. Transfer the cooked chicken to a plate and set aside.
- Sauté the onions: In the same skillet, add the chopped onions and sauté for approximately 5 minutes until they are softened and lightly browned. If the skillet seems dry during this process, add a small splash of olive oil to prevent sticking and promote caramelization.
- Make the sauce: Pour in the chicken broth and add the softened Boursin cheese to the skillet with the onions. Stir continuously until the cheese melts and combines with the broth, forming a smooth sauce. Allow the sauce to bubble gently for 5 minutes to thicken. If using, stir in the chopped parsley to add fresh herbaceous notes.
- Combine chicken and sauce: Return the cooked chicken pieces and any accumulated juices from the plate back into the skillet. Let the chicken warm in the sauce for a couple of minutes, allowing the sauce consistency to thicken further. If the sauce is too thick, add a splash more chicken broth to reach your desired consistency.
- Final seasoning and serve: Taste the sauce and season with additional salt and pepper if necessary, keeping in mind that the sauce may already be salty from the broth and Boursin cheese. Serve immediately for best flavor and texture.
