These bars are easy to make, featuring a crumbly oat base and topping with a sweet, bubbly blueberry filling baked to golden perfection. Perfect for health-conscious food lovers, they make a satisfying treat or on-the-go breakfast.

Ingredients

Units Scale

Oat Base:

  • 1 cup old-fashioned oats
  • 3/4 cup all-purpose flour (or gluten-free flour blend)
  • 1/3 cup light brown sugar
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)
  • 6 tablespoons unsalted butter, melted (or coconut oil)
  • 1 teaspoon vanilla extract

Blueberry Filling:

  • 1 cup blueberries (fresh or frozen)
  • 1/4 cup granulated sugar
  • 2 teaspoons cornstarch

Instructions

  1. Preheat and Prepare: Preheat your oven to 375°F (190°C). Line an 8-inch square baking pan with parchment paper, ensuring some overhang for easy bar removal later.
  2. Mix Dry Ingredients: In a large bowl, combine old-fashioned oats, flour, light brown sugar, baking soda, salt, and optional cinnamon. Stir until evenly mixed.
  3. Add Wet Ingredients: Pour in melted butter and vanilla extract. Mix thoroughly until the mixture becomes crumbly and holds together when pressed.
  4. Form Base Layer: Press half of the oat mixture firmly and evenly into the bottom of the prepared baking pan to create a solid base layer.
  5. Prepare Blueberry Filling: In a separate bowl, toss the blueberries with granulated sugar and cornstarch until they are well coated. This will help thicken the filling while baking.
  6. Add Filling: Spread the blueberry mixture uniformly over the oat base layer in the baking pan.
  7. Add Top Oat Layer: Crumble the remaining oat mixture evenly over the blueberries, gently pressing down slightly to secure the topping.
  8. Bake: Place the pan in the preheated oven and bake for 35 to 40 minutes, or until the top is golden brown and the blueberry filling is bubbling.
  9. Cool and Serve: Remove the pan from the oven and allow the bars to cool completely on a wire rack. Use the parchment paper overhang to lift the entire block out, then cut into 12 bars for serving.

Notes

  • Add lemon zest to the blueberry filling for a bright, zesty twist.
  • Incorporate 1/4 cup almond meal into the oat mixture to enhance texture and flavor.
  • Drizzle the cooled bars with an almond or vanilla glaze for added sweetness and presentation.
