- 1 cup dried mixed berries (cranberries, blueberries, cherries)
- 3/4 cup shelled pistachios, chopped
- 1/2 cup almonds or cashews, chopped
- 2 tablespoons chia seeds
- 2 tablespoons sesame seeds
- 1/4 cup honey or maple syrup
- 1/2 teaspoon vanilla extract
- Pinch of sea salt
Instructions
- Add dried berries to a food processor and pulse until broken down and sticky.
- Transfer to a large mixing bowl and stir in pistachios, chopped nuts, chia seeds, sesame seeds, vanilla, salt, and sweetener.
- Mix thoroughly until a sticky dough forms. If too dry, add a teaspoon of warm water at a time.
- Scoop tablespoon-sized portions and roll into firm balls using your hands.
- Chill in the fridge for at least 20 minutes before serving.
Notes
- Store in an airtight container in the refrigerator for up to 1 week.
- Can be frozen for longer storage—just thaw a few minutes before eating.
