Description

A hearty and well-rounded bowl featuring BBQ chicken, crispy roasted potatoes, and steamed broccoli—ideal for easy dinners or meal prep.


Ingredients

  • 2 boneless skinless chicken breasts, cubed
  • 1/2 cup BBQ sauce (your favorite variety)
  • 3 medium potatoes, chopped into wedges
  • 1/2 onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups broccoli florets
  • 1 tablespoon water

Instructions

  1. Preheat oven to 425°F (220°C). On a sheet pan, toss potatoes and onions with olive oil, garlic powder, paprika, salt, and pepper. Roast for 25–30 minutes until golden and crisp, flipping halfway.
  2. While the potatoes roast, heat a skillet over medium-high heat. Add the cubed chicken and cook for 6–8 minutes, stirring occasionally, until fully cooked.
  3. Pour BBQ sauce over the cooked chicken and simmer for 2–3 minutes until well coated and sticky.
  4. In a separate pan, steam the broccoli with 1 tablespoon of water over medium heat for 5–6 minutes until vibrant green and tender.
  5. Assemble the bowls with a portion of roasted potatoes, steamed broccoli, and BBQ chicken. Serve warm.
