- 2 boneless skinless chicken breasts, cubed
- 1/2 cup BBQ sauce (your favorite variety)
- 3 medium potatoes, chopped into wedges
- 1/2 onion, sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 cups broccoli florets
- 1 tablespoon water
Instructions
- Preheat oven to 425°F (220°C). On a sheet pan, toss potatoes and onions with olive oil, garlic powder, paprika, salt, and pepper. Roast for 25–30 minutes until golden and crisp, flipping halfway.
- While the potatoes roast, heat a skillet over medium-high heat. Add the cubed chicken and cook for 6–8 minutes, stirring occasionally, until fully cooked.
- Pour BBQ sauce over the cooked chicken and simmer for 2–3 minutes until well coated and sticky.
- In a separate pan, steam the broccoli with 1 tablespoon of water over medium heat for 5–6 minutes until vibrant green and tender.
- Assemble the bowls with a portion of roasted potatoes, steamed broccoli, and BBQ chicken. Serve warm.
