Description

Baked Shrimp with Feta and Tomatoes is a vibrant Mediterranean dish featuring juicy, tender shrimp baked with sweet cherry tomatoes, creamy feta cheese, and aromatic herbs. This quick and healthy seafood recipe is perfect for a light, satisfying dinner that’s full of flavor and ready in under 30 minutes!


Ingredients

  • 1 lb large shrimp, peeled and deveined

  • 1 cup cherry tomatoes, halved

  • 6 oz feta cheese, cut into cubes

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • 1 teaspoon dried oregano

  • 1/2 teaspoon crushed red pepper flakes (optional)

  • Salt and pepper to taste

  • 2 tablespoons fresh parsley, chopped

  • Lemon wedges for serving


Instructions

  • Preheat the oven to 400°F (200°C).

  • In a large bowl, toss shrimp with olive oil, garlic, oregano, crushed red pepper flakes (if using), salt, and pepper.

  • Spread the shrimp mixture into a baking dish.

  • Scatter the halved cherry tomatoes and feta cubes over the shrimp.

  • Bake for 12–15 minutes, until the shrimp are pink and cooked through, and the feta is slightly melted.

  • Remove from the oven and sprinkle with fresh chopped parsley.

  • Serve immediately with lemon wedges on the side.


Notes

  • For added richness, drizzle a little extra olive oil over the dish before serving.
