Description

A light and elegant appetizer layered with creamy herbed avocado mousse, delicate smoked salmon, and a refreshing cucumber-herb topping—served chilled in glass verrines for a sophisticated presentation.


Ingredients

  • 2 ripe avocados
  • 1 tablespoon lime juice
  • 1 tablespoon Greek yogurt or sour cream
  • 1 tablespoon finely chopped cilantro
  • Salt and pepper to taste
  • 5 oz (140g) smoked salmon, finely chopped
  • 1/2 small cucumber, diced
  • 1 teaspoon olive oil
  • 1 teaspoon lime juice
  • 1 teaspoon chopped fresh dill or parsley
  • Salt and pepper to taste

Instructions

  1. In a bowl, mash the avocados with lime juice, yogurt, cilantro, salt, and pepper until smooth. Adjust seasoning to taste.
  2. In a separate bowl, toss the diced cucumber with olive oil, lime juice, chopped herbs, salt, and pepper.
  3. To assemble, spoon a layer of avocado mousse into the bottom of each glass verrine.
  4. Add a generous layer of finely chopped smoked salmon on top of the avocado.
  5. Top with the cucumber-herb mixture and garnish with extra herbs if desired.
  6. Chill for 15 minutes before serving. Serve with lime wedges or crostini on the side.

Notes

  • Use ripe avocados for a smooth, creamy texture.
  • Greek yogurt adds creaminess and a tangy contrast to the avocado layer.
  • These can be assembled up to 2 hours in advance and kept chilled.
