- 2 ripe avocados
- 1 tablespoon lime juice
- 1 tablespoon Greek yogurt or sour cream
- 1 tablespoon finely chopped cilantro
- Salt and pepper to taste
- 5 oz (140g) smoked salmon, finely chopped
- 1/2 small cucumber, diced
- 1 teaspoon olive oil
- 1 teaspoon lime juice
- 1 teaspoon chopped fresh dill or parsley
- Salt and pepper to taste
Instructions
- In a bowl, mash the avocados with lime juice, yogurt, cilantro, salt, and pepper until smooth. Adjust seasoning to taste.
- In a separate bowl, toss the diced cucumber with olive oil, lime juice, chopped herbs, salt, and pepper.
- To assemble, spoon a layer of avocado mousse into the bottom of each glass verrine.
- Add a generous layer of finely chopped smoked salmon on top of the avocado.
- Top with the cucumber-herb mixture and garnish with extra herbs if desired.
- Chill for 15 minutes before serving. Serve with lime wedges or crostini on the side.
