Description

These Avocado Bacon and Egg Toasts are a savory, spicy twist on a brunch classic. Topped with creamy avocado, crispy bacon, fried eggs, and a drizzle of hot honey, each slice of toast is packed with flavor and texture. Perfect for a weekend breakfast or a quick weekday indulgence.

Ingredients

  • 4 slices thick-cut bacon

  • 2 ripe avocados, peeled and pitted

  • 4 slices artisan bread

  • 4 eggs

  • 2 tbsp hot honey

  • Salt and pepper, to taste

  • Chili flakes (optional)

Instructions

  1. Cook the Bacon:
In a skillet over medium heat, cook bacon until crispy. Transfer to a paper towel-lined plate to drain.

  2. Fry the Eggs:
In the same skillet, fry eggs to your desired doneness (sunny side up, over-easy, etc.).

  3. Toast the Bread:
Toast slices of artisan bread until golden and crispy.

  4. Mash the Avocado:
In a bowl, mash avocados with salt and pepper to taste.

  5. Assemble the Toasts:

    • Spread mashed avocado over each slice of toasted bread.

    • Top with a fried egg.

    • Break bacon into pieces and sprinkle over the eggs.

    • Drizzle hot honey on top.

    • Sprinkle chili flakes for an extra kick, if desired.

Notes

  • Swap hot honey for sriracha or chili oil for a different spicy note.

  • Great on sourdough, rye, or any hearty bread.

  • Add microgreens or arugula for freshness and crunch.
