Description

Authentic Pico de Gallo is a fresh, vibrant Mexican salsa made with diced tomatoes, onions, jalapeño, cilantro, lime juice, and seasonings. This easy-to-make condiment is perfect for adding bright, zesty flavors to tacos, grilled meats, or as a healthy dip with chips. Ready in just 15 minutes, it celebrates fresh ingredients with no cooking required.

Ingredients

Scale

Produce

  • 1 lb Roma tomatoes (34 medium), diced
  • 1/2 medium white onion (1 cup chopped)
  • 1 jalapeno pepper, seeded and finely minced (optional)
  • 1/2 cup cilantro, chopped
  • 2 Tbsp lime juice (from 1 lime)

Seasonings

  • 1/2 tsp salt (or to taste)
  • 1/8 tsp black pepper

Instructions

  1. Combine fresh ingredients: In a medium bowl, add the diced Roma tomatoes, chopped white onion, seeded and finely minced jalapeño pepper, and chopped cilantro. Mix them gently to combine all the fresh components evenly.
  2. Season the salsa: Stir in the 2 tablespoons of fresh lime juice, then season the mixture lightly with 1/2 teaspoon salt and 1/8 teaspoon black pepper. Adjust seasoning to taste according to your preference.
  3. Serve or store: Enjoy the Pico de Gallo immediately for maximum freshness, or cover the bowl and refrigerate for a few hours or overnight to allow flavors to meld beautifully before serving.

Notes

  • For less heat, fully remove the jalapeño seeds before mincing.
  • Use garden tomatoes or any ripe tomato variety if Roma tomatoes are unavailable.
  • This salsa is best enjoyed fresh but can be refrigerated for up to 2 days.
  • Adjust lime juice and salt amounts based on taste preference.
  • Great as a topping for tacos, grilled meats, or as a dip with tortilla chips.
