Description

Ingredients

  • 1/2 tsp baking soda
  • 1/4 tsp black pepper
  • 1/4 tsp smoked paprika (optional)
  • 1/2 cup unsalted butter, softened
  • 1/3 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup shredded sharp cheddar cheese
  • 1/2 cup cooked bacon, chopped
  • 1/4 cup caramelized onions or crispy fried onions

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together flour, baking soda, pepper, and paprika.
  3. In a large bowl, cream the butter with brown and white sugar until fluffy.
  4. Beat in the egg and vanilla until well incorporated.
  5. Slowly mix in dry ingredients until just combined.
  6. Fold in cheddar cheese, bacon bits, and onion.
  7. Scoop dough onto prepared sheet, spacing 2 inches apart.
  8. Bake for 10–12 minutes, or until golden around edges and just set in center.
  9. Cool on sheet for 5 minutes before transferring to a rack.
  10. Serve warm or at room temperature.

Notes

  • Smoked paprika adds depth but can be omitted.
  • Use crispy fried onions for a more textured bite.
  • Cookies are best served fresh but can be stored in an airtight container for up to 3 days.
