Chicken and Seasoning
- 20 oz (1 1/4 lbs) boneless, skinless chicken breasts
- 2 tbsp all-purpose flour
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- 1/2 tsp sweet paprika
- 1/2 tsp salt
- Freshly ground pepper to taste
Cooking Fats and Flavorings
- 1 tbsp olive oil
- 3 tbsp unsalted butter, divided
- 3 garlic cloves, minced
- 2 tbsp fresh parsley, chopped
Instructions
- Prepare the chicken: Dry the chicken breasts thoroughly with a paper towel and cut them into 1-inch bite-sized pieces for even cooking.
- Season the chicken: Place the chicken pieces into a bowl, then sprinkle all-purpose flour, dried basil, sweet paprika, dried oregano, salt, and freshly ground pepper over them. Toss well until each piece is evenly coated with the flour and herbs.
- Heat the skillet: Place a large cast iron skillet over medium-high heat and add olive oil along with 1 tablespoon of butter. Allow the oil to heat and the butter to melt completely before adding the chicken.
- Cook the chicken: Add the chicken pieces in a single layer to the hot skillet. Let them cook undisturbed for about 3 minutes to develop a golden crust. Flip the pieces and cook for an additional 2 minutes to ensure they are cooked through.
- Add garlic butter and parsley: Add the remaining 2 tablespoons of butter, the minced garlic, and freshly chopped parsley to the skillet. Stir and cook for another 1 minute until the garlic is fragrant and the chicken is fully cooked.
- Serve: Remove the skillet from heat and serve the garlic butter chicken bites immediately while hot. Enjoy them alone or paired with rice, pasta, or a fresh salad.
Notes
- Squeeze fresh lemon juice over the chicken just before serving to add brightness and a hint of acidity.
- For a spicy variation, sprinkle red pepper flakes over the chicken after cooking.
- Garnish with grated Parmesan cheese to enhance the flavor with a cheesy touch.
